The historic splurge. British Mandate headquarters, site of the 1946 bombing, host to a century of presidents and prime ministers. For a history lover, sleeping inside the story beats any museum. The classic rooms are dated in a way regulars find charming.

The reason for the trip. Stand at the Kotel, walk the Cardo (the excavated Roman main street), see the Hurva Synagogue, and look out from the rooftops. Go with a guide the first time; the layers make no sense alone and every stone has three stories.

The Six-Day War battle that reunified Jerusalem, told in the actual trenches where it happened, then the national cemetery: Herzl’s tomb, Rabin’s grave, and the soldiers’ plots that explain modern Israel more than any lecture. Quietly devastating and deeply worth it. (Yad Vashem is next to Mount Herzl; skip it as planned, no one will mind.)

The citadel museum by Jaffa Gate tells the whole city’s story, and after dark its walls become the screen for a moving sound-and-light show. An easy, magical evening.

The best free experience in Israel. Machane Yehuda in the morning while the whole city shops, quiet afternoon, then the Kotel as the sun sets and thousands sing Shabbat in. Book a hosted Shabbat dinner with a local family (operators like Shabbat of a Lifetime arrange it) and walk home through streets gone suddenly, beautifully silent.

The flagship day, and November weather is perfect for it. Cable car up to Herod’s mountain fortress where the Roman siege ended in 73 CE, the oasis waterfalls of Ein Gedi (walk as far as feels good), then float in the lowest place on earth.

For the war-history itch nothing else scratches. Latrun’s Yad La-Shiryon: the armored corps memorial with 150+ tanks on the ridge that guarded the road to Jerusalem in 1948. Then the Ayalon Institute in Rehovot: a clandestine bullet factory that ran for three years under a kibbutz laundry, hidden from the British. The tour is one astonishing hour.

The other Israel: 100 years old instead of 3,000. Note: Independence Hall on Rothschild is under long renovation with a temporary visitor center nearby; check status before building the day around it.

A wonder of the world, and November is its best month: 60s–70s by day, clear light, thin crowds. Cross the border with the group, sleep in Wadi Musa or a Bedouin camp, and walk the Siq to the Treasury with time to breathe. The walk in is ~1.5 miles of gentle downhill; golf carts run the return if the legs say so.

The other flagship. Tzfat, the mountaintop city of Kabbalah: the Ari and Caro synagogues and the artists’ quarter. The Sea of Galilee. The Golan Heights: Mt. Bental’s Six-Day War bunkers with Syria spread out below (plus the best-named coffee stop in the Middle East, Coffee Anan), the Valley of Tears nearby, Talmudic-era Katzrin, a Druze lunch. Both of your war eras and a thousand years of Jewish mysticism in one loop of green hills.

Only for the 14-day version. Mitzpe Ramon perches on the rim of a 25-mile erosion crater; sunrise there is a religious experience of its own. On the way: Sde Boker, where David and Paula Ben-Gurion lie above the Zin wilderness he believed was Israel’s future. Stargazing is world-class.
